Who doesn’t love ice cream? Everyone loves a refreshing treat from time to time and especially kiddos. I have started gardening this year and well, I have learned a lot. What has worked and what has not worked so well but that is another blog post for a different day. What I decided this year as we moved into a home that allowed for the space to garden, I wanted to make a homestead. I want to try new recipes that involve the food I grow. So here it goes. You are at the very beginning of my journey guys, and this is the first thing I made, dairy free ice cream!

Why dairy free

When you have food allergies it means trying to find products, recipes and ingredients that will work and that can be tough at times. Ever since Brea and Ramona were first diagnosed with food allergies, we have been on this journey of forever looking at labels. So whether you have a food intolerance, allergy or just a diet preference, if you know, you know. Brea has since out grown her egg allergy but Ramona still struggles on a daily basis. We have to look out for dairy, eggs and nuts. I want Ramona to have the same food experiences as the rest of the family so luckily there are a lot of products out there you can buy to suit your dietary needs. 

 

So when I stumbled upon this recipe I was very excited!  A few tweaks later, it was such a hit! In fact, all my kiddos (allergy and non allergy alike) loved it! So today,  I am sharing it on the blog so you can try it too!

dairy free strawberry basil ice cream

Prep Time 20 minutes
Cook Time 4 hours
Course Dessert
Servings 4

Ingredients
  

  • 2 cans full fat coconut milk chilled overnight
  • 1/3 cup maple syrup
  • 2 cups basil leaves
  • 1 batch roasted balsamic strawberries

balsamic strawberries

  • 1 pint fresh strawberries sliced in half
  • 1/4 cup maple syrup
  • 3 tbsp balsamic vinegar
  • 2 tsp vanilla extract

Instructions
 

  • pour all ingredients into a blender until smooth and creamy
  • pour into a freezer safe container and allow it to freeze, stirring every 30min-one hour for the first few hours until it reaches the consistency you like.

How to make roasted balsamic strawberries

  • preheat oven to 375F. place parchment paper in a small baking dish
  • combine liquid ingredients in a bowl and mix thoroughly.
  • add strawberries and toss until they are well coated. Transfer the contents to the baking dish.
  • Bake for 30 minutes

Notes

NOTE: If you have an ice cream maker, it makes it that much easier:) pour all ingredients into your ice cream maker bowl and follow your machines instructions!
